What the evidence says

• White Labs screened its library for β-lyase activity and blended WLP037 Yorkshire Square with WLP830 German Lager; in a split-batch trial against WLP001, gas chromatography found 3MHA above its sensory threshold only in the WLP077 beer. White Labs, WLP077

Rating context: manufacturers usually quote free-thiol concentration relative to the sensory threshold, not conversion yield. Peer-reviewed work finds that only a small fraction of bound precursors is converted in beer fermentation, so the ordering between strains is more reliable than any absolute number Chenot et al. 2021 Michel et al. 2019.

In practice

Attenuation around 75 to 82 percent with low flocculation, so expect some haze. A good first thiol yeast for anyone who wants to avoid engineered strains.
